  1. Heat 1 tablespoon of oil in a large skillet or wok over medium haet.
  2. Add the minced garlic and cook for 1 minute until fragrant.
  3. Add the diced vegetable to the skillet and stir- fry for 2-3 minutes until they are slightly tender . If you”re using raw meat or shrimp , you can add it at this stage and cook until fully cooked through .
  4. Push the vegetables( and meat if using) to one side of the skillet and pour the beaten eggs into the other side . Scramble the eggs until cooked through .
  5. Add the remaining tablespoon of oil to the skillet , then add the cold cooked rice . Break up any clumps and stir-fry for a few minutes, mixing it with the vegetables and eggs .
  6. Add the soy sauce and oyster sauce ( if using )to the skillet and continue stir-frying for another 2-3 minutes until everything is well combined and heated through .
  7. Taste and season with salt and pepper as needed . Remember that soy sauce is already salty so you might not need much additional salt .
  8. If desired , you can add additional cooked chicken , shrimp or tofu at this stage and stir-fry for another minute to heat through
  9. Remove from heat and serve hot . You can garnish with sliced green onions or cilantro for added flavor .
